Three Bean Salad with Cilantro Lime Vinaigrette

Plant based salad with a delicious and refreshing taste. Great sources of protein, carbohydrate, fat and fiber all together in one dish!

Ingredients:

  • ¼ bunch cilantro stems

  • 1/4 cup freshly squeezed lime juice (about 2 limes)

  • 1/3 cup extra virgin olive oil

  • Pinch of coarse salt and freshly ground pepper

  • 1 (15 ounce) can cannellini beans, rinsed and drained

  • 1 (15 ounce) can kidney beans, rinsed and drained

  • 1 (15 ounce) can garbanzo beans, rinsed and drained

  • ½ red onion, chopped fine

Directions:

  1. Place cilantro in a food processor and pulse until coarsely chopped

  2. With machine running, add lime juice and then olive oil

  3. Season with salt and pepper

  4. Set dressing aside

  5. In a large bowl, combine cannellini beans, kidney beans, garbanzo beans and red onions.

  6. Pour dressing over ingredients in the bowl, cover and refrigerate for 30 min if possible

  7. Serve and enjoy

Things to note:

You can substitute any of the beans for whatever bean you enjoy the most!
