Scooped Apple Salad

Looking for a fun and festive side or salad to add to your next lunch or dinner party?

This scooped apple salad is a great way to wow your guests with a healthy bite! 

Ingredients:

  • 1 large apple

One version:

  • ‪1/4 cup pomegranate seeds

  • ‪1/2 avocado, diced

  • ‪1 Tbs candied walnuts crushed

Second version:

  • 1 package Shredded Brussles and Kale Mix

  • 2 Tbs Sunflower Seeds

  • 2 Tbs Craisins

Plus

  • ‪1 Tbs apple cider vinegar

  • 1 Tbs olive oil (if using greens)

  • Optional: 1 plate of 1 – 2 cups of Kale (or a green of your choice)

Directions:

Directions:

  1. Slice off top off apple.

  2. Using an ice cream scooper or spoon, scoop out apple flesh, leaving about 1/4" rim.

  3. Scoop apple flesh into a small bowl.

  4. In a different small bowl, toss pomegranate seeds, avocado, and walnuts

  5. ((OR toss brussles and kale, sunflower seeds and craisins)). 

  6. Option to add back any of the apple flesh into mixture for more volume and flavor.

  7. Drizzle with a small amount of apple cider vinegar (optional).

  8. Carefully spoon mixture back into hollowed apples.

  9. If serving with greens, drizzle greens with extra virgin olive oil, more apple cider vinegar, salt and pepper; or your favorite vinaigrette.

Things to note:

Make and use same day to prevent apple from browning.
