Whole Wheat, Chocolate Chip, Peanut Butter Banana Bread

Change up your regular banana bread, with this whole wheat protein packed version!

Ingredients:

  • 1 cup whole wheat flour 

  • 1 tsp baking powder

  • 1/2 tsp baking soda 

  • 1/4 tsp salt

  • 2 ripe bananas (smashed)

  • 1/2 cup natural or crunchy peanut butter

  • 3/4 cup light brown sugar

  • 1/2 cup plain fat free yogurt 

  • 1 large egg 

  • 1 tbs canola oil 

  • 3/4 cup semi sweet chocolate chips 

Directions:

  1. Preheat oven to 350 degrees F. 

  2. Spray a 9x5-inch loaf pan with cooking spray.

  3. Whisk whole wheat flour, baking powder, baking soda, and salt in a large bowl.

  4. Mash bananas separately in a new bowl. 

  5. Combine mashed bananas, peanut butter, brown sugar, yogurt, egg, and canola oil and mix together.

  6. Add the banana mixture into the dry ingredients until thoroughly combined; stir in chocolate chips.

  7. Fill loaf pan with batter. 

  8. Bake in the preheated oven until the loaf is lightly browned at the edges, and inside is thoroughly cooked, this should be about 55 minutes.

  9. Cool the bread in the pan for 15 - 20 minutes before removing bread from pan to finish cooling. Slice when cool.

Things to note:

Each loaf makes 8 - 12 servings depending on width of slices.
